Ingredients

  • Chana dal (split chickpeas) - 100 grams
  • Potato - 1 medium (about 150 grams)
  • Onion - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Bread crumbs - 1/4 cup
  • Oil - for shallow frying
  • Burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1, sliced
  • Vegan mayo - 2 tablespoons

Steps

  1. Soak the chana dal in water for at least 4 hours or overnight. Drain and rinse before use.
  2. In a pot, boil the potato until tender. Once cooked, peel and mash the potato in a bowl.
  3. In a food processor, pulse the soaked chana dal with ginger, green chili, cumin powder, salt, and chopped coriander leaves until you achieve a coarse mixture. Do not over-blend.
  4. In a large mixing bowl, combine the mashed potato with the chana dal mixture, add chopped onions, garam masala, and bread crumbs. Mix well to combine.
  5. Form the mixture into two equal-sized patties.
  6. Heat oil in a non-stick skillet over medium heat. Shallow fry the patties for 4-5 minutes on each side or until golden brown and crispy.
  7. While the patties are frying, slice the burger buns in half and toast them lightly on a pan or in a toaster.
  8. Assemble the burgers by spreading vegan mayo on the bottom half of each bun, adding a lettuce leaf, followed by the cooked masala vada patty, sliced tomatoes, and cucumbers. Top with the other half of the bun.
  9. Serve hot with chutney or your favorite dipping sauce.
