- Uttapam batter (fermented rice and lentil mix) - 1 cup

- Tomato (finely chopped) - 1 small
- Capsicum (finely chopped) - 1 small
- Green chili (finely chopped) - 1 small
- Coriander leaves (chopped) - 2 tablespoons
- Salt - to taste
- Oil (for cooking) - 2 tablespoons
Steps
- In a mixing bowl, combine the uttapam batter with salt and mix well.
- Add the chopped onions, tomatoes, capsicum, green chili, and coriander leaves to the batter and mix until well incorporated.
- Heat a non-stick skillet or tawa over medium heat and add a teaspoon of oil.
- Pour a ladleful of the prepared batter onto the skillet, spreading it into a thick pancake shape.
- Drizzle a little oil around the edges of the uttapam and cook for about 3-4 minutes, or until the bottom is golden brown.
- Flip the uttapam carefully and cook for an additional 3-4 minutes until both sides are cooked through and crispy.
- Repeat the process with the remaining batter, adding more oil as needed.
- Serve hot with coconut chutney or sambar.
