Ingredients

  • Uttapam batter (fermented rice and lentil mix) - 1 cup
  • Onion (finely chopped) - 1 small
  • Tomato (finely chopped) - 1 small
  • Capsicum (finely chopped) - 1 small
  • Green chili (finely chopped) - 1 small
  • Coriander leaves (chopped) - 2 tablespoons
  • Salt - to taste
  • Oil (for cooking) - 2 tablespoons

Steps

  1. In a mixing bowl, combine the uttapam batter with salt and mix well.
  2. Add the chopped onions, tomatoes, capsicum, green chili, and coriander leaves to the batter and mix until well incorporated.
  3. Heat a non-stick skillet or tawa over medium heat and add a teaspoon of oil.
  4. Pour a ladleful of the prepared batter onto the skillet, spreading it into a thick pancake shape.
  5. Drizzle a little oil around the edges of the uttapam and cook for about 3-4 minutes, or until the bottom is golden brown.
  6. Flip the uttapam carefully and cook for an additional 3-4 minutes until both sides are cooked through and crispy.
  7. Repeat the process with the remaining batter, adding more oil as needed.
  8. Serve hot with coconut chutney or sambar.
