  • Green chili - 1, slit
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add cumin seeds and let them sizzle for a few seconds.
  3. Add chopped onions and sauté until they turn golden brown.
  4. Stir in minced garlic, grated ginger, and slit green chili, cooking for 1-2 minutes until fragrant.
  5. Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook for about 8-10 minutes until the tomatoes soften.
  6. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 10 minutes.
  7. Add garam masala and black pepper. Blend the soup until smooth using an immersion blender or regular blender.
  8. Adjust seasoning if necessary, then stir in chopped coriander leaves.
  9. Serve hot with a drizzle of olive oil and additional coriander for garnish.
