- Olive oil - 1 tablespoon
- Red onion - 1 medium, thinly sliced
- Bell pepper (any color) - 1 medium, thinly sliced
- Tomato - 1 medium, chopped
- Spinach - 1 cup, fresh
- Chickpeas - 1/2 cup, cooked
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder (adjust to taste) - 1/2 teaspoon
- Salt - 1/2 teaspoon, or to taste
- Fresh cilantro - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Dairy-free cheese (optional) - 1/2 cup, shredded
Steps
- Preheat the oven to 220°C (425°F).
- In a skillet, heat olive oil over medium heat. Add the sliced red onion and sauté until translucent, about 3-4 minutes.
- Add the bell pepper and sauté for another 3 minutes until slightly softened.
- Stir in the chopped tomato, spinach, and cooked chickpeas. Cook for 2-3 minutes until the spinach wilts.
- Add the coriander powder, cumin powder, garam masala, turmeric powder, red chili powder, and salt. Mix well and cook for an additional 2 minutes.
- Remove the skillet from heat and stir in the chopped cilantro and lemon juice.
- Spread the vegetable mixture evenly over the pizza base.
- If using, sprinkle the dairy-free cheese on top.
- Transfer the pizza to the preheated oven and bake for 15-20 minutes, or until the base is golden and crispy.
- Remove from the oven, slice, and serve hot.
