Ingredients

  • Rolled oats - 1 cup
  • Vegetable broth - 1 cup
  • Carrot, grated - 1 medium
  • Bell pepper, diced - 1 small
  • Onion, finely chopped - 1 small
  • Green peas - 1/2 cup
  • Ginger paste - 1 teaspoon
  • Garlic paste - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Coriander powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Olive oil - 1 tablespoon
  • Fresh coriander leaves, chopped - 2 tablespoons
  • Cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the grated carrot, diced bell pepper, and green peas, and cook for another 5 minutes.
  4. Stir in the ginger paste, garlic paste, turmeric, cumin, coriander, garam masala, salt, and black pepper, and cook for 2 more minutes until fragrant.
  5. In a mixing bowl, combine the rolled oats and vegetable broth. Let it sit for 5 minutes to absorb the liquid.
  6. Add the sautéed vegetable and spice mixture to the oats and mix well.
  7. If using, fold in the chopped fresh coriander and cheese.
  8. Transfer the mixture to a greased baking dish and spread it evenly.
  9. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  10. Remove from the oven, let it cool for a few minutes, then slice and serve warm.
