Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - 1 teaspoon (or to taste)
  • Lemon juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons (chopped)

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for about 10 minutes to release excess moisture.
  3. In a bowl, mix olive oil, turmeric powder, cumin powder, coriander powder, red chili powder, garam masala, and lemon juice to create a marinade.
  4. Pat the eggplant slices dry with a paper towel to remove excess moisture and salt.
  5. Brush the marinade generously on both sides of the eggplant slices.
  6. Place the marinated eggplant slices on the grill and cook for about 4-5 minutes on each side, or until they are tender and have nice grill marks.
  7. Remove the grilled eggplant from the grill and garnish with chopped fresh cilantro before serving.
