- Garam masala - 1/2 teaspoon

- Lemon juice - 1 tablespoon
- Fresh cilantro - 2 tablespoons (chopped)
Steps
- Preheat your grill or grill pan over medium-high heat.
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let them sit for about 10 minutes to release excess moisture.
- In a bowl, mix olive oil, turmeric powder, cumin powder, coriander powder, red chili powder, garam masala, and lemon juice to create a marinade.
- Pat the eggplant slices dry with a paper towel to remove excess moisture and salt.
- Brush the marinade generously on both sides of the eggplant slices.
