Ingredients

  • Dosa batter - 200 grams
  • Potatoes - 2 medium (about 300 grams)
  • Onion - 1 small (about 100 grams)
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Mustard seeds - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Cilantro - 2 tablespoons, chopped
  • Skewers - 4 (soaked in water if wooden)
  • Oil - for cooking

Steps

  1. Boil the potatoes until tender, then peel and mash them in a bowl.
  2. Heat a tablespoon of oil in a pan over medium heat, add mustard seeds and cumin seeds, and let them splutter.
  3. Add the finely chopped onion, green chili, and grated ginger to the pan. Sauté until the onion is translucent.
  4. Stir in turmeric, coriander powder, garam masala, and salt. Cook for another minute.
  5. Combine the sautéed mixture with the mashed potatoes and mix in chopped cilantro. Set aside to cool.
  6. Preheat a grill or a pan on medium heat and lightly grease it with oil.
  7. Take a skewer and dip it into the dosa batter, then take a portion of the potato filling and press it around the batter-coated skewer, forming a long, thin shape.
  8. Repeat the process for the remaining skewers.
  9. Place the skewers on the grill or pan and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  10. Serve hot with coconut chutney or tomato chutney.
