- Dosa batter - 1 cup
- Potato - 1 medium, boiled and mashed
- Onion - 1 small, finely chopped
- Tomato - 1 small, finely chopped
- Green chili - 1, finely chopped
- Curry leaves - 5-6, chopped
- Mustard seeds - 1/2 tsp
- Turmeric powder - 1/4 tsp
- Coriander powder - 1/2 tsp
- Salt - to taste
- Oil - 2 tbsp
- Vegan cheese - 1/2 cup, shredded
- Bell pepper - 1/2, thinly sliced
- Fresh coriander - a handful, chopped
Steps
- In a pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them splutter.
- Add chopped onions, green chili, and curry leaves to the pan, sautéing until the onions are translucent.
- Stir in the turmeric powder, coriander powder, and salt, followed by the mashed potato. Mix well and cook for 2-3 minutes until heated through.
- In a separate non-stick skillet, heat 1/2 tablespoon of oil over medium heat. Pour in about 1/2 cup of dosa batter, spreading it into a circle to form a thin crepe.
- Cook the dosa for 2-3 minutes until the edges start to lift and the bottom is golden brown.
- Spread a portion of the potato filling evenly on half of the dosa. Sprinkle vegan cheese on top, followed by bell pepper slices.
- Fold the dosa over to cover the filling and press gently. Cook for another 1-2 minutes to melt the cheese.
- Repeat the process for the second dosa.
- Garnish with fresh coriander and serve hot with coconut chutney or tomato ketchup.
