Ingredients

  • Dosa batter - 1 cup
  • Potato - 1 medium, boiled and mashed
  • Onion - 1 small, finely chopped
  • Tomato - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Curry leaves - 5-6, chopped
  • Mustard seeds - 1/2 tsp
  • Turmeric powder - 1/4 tsp
  • Coriander powder - 1/2 tsp
  • Salt - to taste
  • Oil - 2 tbsp
  • Vegan cheese - 1/2 cup, shredded
  • Bell pepper - 1/2, thinly sliced
  • Fresh coriander - a handful, chopped

Steps

  1. In a pan, heat 1 tablespoon of oil over medium heat. Add mustard seeds and let them splutter.
  2. Add chopped onions, green chili, and curry leaves to the pan, sautéing until the onions are translucent.
  3. Stir in the turmeric powder, coriander powder, and salt, followed by the mashed potato. Mix well and cook for 2-3 minutes until heated through.
  4. In a separate non-stick skillet, heat 1/2 tablespoon of oil over medium heat. Pour in about 1/2 cup of dosa batter, spreading it into a circle to form a thin crepe.
  5. Cook the dosa for 2-3 minutes until the edges start to lift and the bottom is golden brown.
  6. Spread a portion of the potato filling evenly on half of the dosa. Sprinkle vegan cheese on top, followed by bell pepper slices.
  7. Fold the dosa over to cover the filling and press gently. Cook for another 1-2 minutes to melt the cheese.
  8. Repeat the process for the second dosa.
  9. Garnish with fresh coriander and serve hot with coconut chutney or tomato ketchup.
