- Dosa batter - 1 cup
- Potatoes - 2 medium, boiled and mashed
- Onion - 1 small, finely chopped
- Green chilies - 1, finely chopped
- Ginger - 1 inch, grated
- Curry leaves - 8-10, chopped
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Coriander powder - 1 teaspoon
- Salt - to taste
- Oil - for cooking
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1 small, sliced
- Coconut chutney - for serving
- Green chutney - for serving
Steps
- In a pan, heat a little oil over medium heat. Add mustard seeds and let them splutter.
- Add chopped onions, green chilies, ginger, and curry leaves. Sauté until the onions are translucent.
- Stir in the turmeric powder, coriander powder, and salt. Add the boiled and mashed potatoes, mixing well. Cook for 2-3 minutes until heated through. Set aside.
- Heat a non-stick skillet or tawa over medium heat. Pour a ladleful of dosa batter and spread it into a thin, round shape. Drizzle a little oil around the edges.
- Cook until the dosa is golden brown and crispy, about 3-4 minutes. Flip and cook for another minute. Remove from the skillet.
- Repeat the process for the second dosa.
- To assemble, place a crispy dosa on a plate. Layer with lettuce, a generous portion of the spiced potato mixture, tomato, and cucumber slices.
- Top with another dosa, pressing gently to hold everything together.
- Serve hot with coconut chutney and green chutney on the side.
