Ingredients

  • Besan (chickpea flour) - 100 grams
  • Yogurt - 50 grams
  • Water - 100 ml
  • Eno fruit salt - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Ginger paste - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Coriander leaves - 2 tablespoons, chopped
  • Mustard seeds - 1 teaspoon
  • Green chili - 1, finely chopped
  • Oil - 1 tablespoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine chickpea flour, yogurt, turmeric powder, red chili powder, ginger paste, and salt. Mix well and add water gradually to form a smooth batter.
  2. Let the batter rest for 15 minutes. After resting, add Eno fruit salt and mix gently until it is well incorporated and the batter is light and airy.
  3. Grease a steaming dish or a flat plate with a little oil. Pour the batter into the dish and spread it evenly.
  4. Steam the batter in a preheated steamer for about 15-20 minutes or until a toothpick inserted comes out clean.
  5. While the dhokla is steaming, heat oil in a small pan. Add mustard seeds and green chili, and sauté until the mustard seeds crackle.
  6. Once the dhokla is cooked, remove it from the steamer and let it cool slightly. Cut it into squares or diamonds.
  7. Drizzle the tempered oil over the dhokla and garnish with chopped coriander leaves and lemon juice before serving.
