- Besan (chickpea flour) - 100 grams
- Yogurt - 50 grams
- Water - 100 ml
- Eno fruit salt - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1/2 teaspoon
- Ginger paste - 1 teaspoon
- Salt - 1/2 teaspoon
- Coriander leaves - 2 tablespoons, chopped
- Mustard seeds - 1 teaspoon
- Green chili - 1, finely chopped
- Oil - 1 tablespoon
- Lemon juice - 1 tablespoon
Steps
- In a mixing bowl, combine chickpea flour, yogurt, turmeric powder, red chili powder, ginger paste, and salt. Mix well and add water gradually to form a smooth batter.
- Let the batter rest for 15 minutes. After resting, add Eno fruit salt and mix gently until it is well incorporated and the batter is light and airy.
- Grease a steaming dish or a flat plate with a little oil. Pour the batter into the dish and spread it evenly.
- Steam the batter in a preheated steamer for about 15-20 minutes or until a toothpick inserted comes out clean.
- While the dhokla is steaming, heat oil in a small pan. Add mustard seeds and green chili, and sauté until the mustard seeds crackle.
- Once the dhokla is cooked, remove it from the steamer and let it cool slightly. Cut it into squares or diamonds.
- Drizzle the tempered oil over the dhokla and garnish with chopped coriander leaves and lemon juice before serving.
