  • Butternut squash - 300 grams, peeled and diced

  • Pure maple syrup - 2 tablespoons
  • Cinnamon - 1 teaspoon
  • Nutmeg - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped pecans - 30 grams
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, toss the diced butternut squash with olive oil, maple syrup, cinnamon, nutmeg, salt, and black pepper until evenly coated.
  3. Spread the squash mixture evenly onto a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes or until the squash is tender and caramelized, stirring halfway through cooking.
