Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the carrots, parsnips, sweet potato, and red onion.
- Drizzle the olive oil over the vegetables, then add the salt, black pepper, and chopped thyme. Toss until evenly coated.
