Ingredients

  • Carrots - 300 grams, peeled and cut into sticks
  • Pure maple syrup - 2 tablespoons
  • Ghee (clarified butter) - 1 tablespoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium saucepan, bring salted water to a boil and add the carrot sticks. Blanch for 5 minutes until slightly tender, then drain and set aside.
  2. In the same saucepan, heat ghee over medium heat. Add the blanched carrots and sauté for 5 minutes until they begin to lightly caramelize.
  3. Pour in the maple syrup, ground cumin, salt, and black pepper. Stir well to coat the carrots evenly.
  4. Continue to cook for an additional 5-7 minutes, allowing the syrup to glaze the carrots and thicken slightly.
  5. Remove from heat and transfer the glazed carrots to a serving dish. Garnish with chopped cilantro before serving.
