  • Ngari (fermented soybean or similar) - 50 grams
  • Mustard oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, minced
  • Green chili - 2, slit
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Coriander leaves - for garnish
  • Water - 1 cup

Steps

  1. Heat mustard oil in a pan over medium heat until it starts to smoke slightly.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Stir in the minced garlic and ginger, cooking until fragrant.
  4. Add the slit green chilies and turmeric powder, mixing well.
  5. Incorporate the fermented bamboo shoot and Ngari, stirring to combine all ingredients.
  6. Pour in the water, and season with salt to taste. Bring to a simmer.
  7. Cover the pan and let it cook for about 15 minutes, allowing the flavors to meld.
  8. Once cooked, turn off the heat and garnish with fresh coriander leaves before serving.
