Mango Chutney

Ingredients

  • Ripe mango - 200 grams, peeled and diced
  • Onion - 50 grams, finely chopped
  • Ginger - 10 grams, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, finely chopped (adjust to taste)
  • Brown sugar - 1 tablespoon
  • Apple cider vinegar - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Coriander leaves - 1 tablespoon, chopped (for garnish)

Steps

  1. Heat a pan over medium heat and add the cumin and mustard seeds. Toast for about 1 minute until fragrant.
  2. Add the chopped onion, ginger, garlic, and green chili to the pan. Sauté until the onion becomes translucent, about 5 minutes.
  3. Stir in the diced mango, brown sugar, apple cider vinegar, turmeric powder, and salt. Mix well to combine all ingredients.
  4. Cook the mixture on low heat for about 15-20 minutes, stirring occasionally until the mango breaks down and the chutney thickens.
  5. Remove from heat and let it cool slightly before transferring to a serving bowl.
  6. Garnish with chopped coriander leaves before serving.
