- Ripe mango - 200 grams, peeled and diced
- Onion - 50 grams, finely chopped
- Ginger - 10 grams, grated
- Garlic - 2 cloves, minced
- Green chili - 1, finely chopped (adjust to taste)
- Brown sugar - 1 tablespoon
- Apple cider vinegar - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Coriander leaves - 1 tablespoon, chopped (for garnish)
Steps
- Heat a pan over medium heat and add the cumin and mustard seeds. Toast for about 1 minute until fragrant.
- Add the chopped onion, ginger, garlic, and green chili to the pan. Sauté until the onion becomes translucent, about 5 minutes.
- Stir in the diced mango, brown sugar, apple cider vinegar, turmeric powder, and salt. Mix well to combine all ingredients.
- Cook the mixture on low heat for about 15-20 minutes, stirring occasionally until the mango breaks down and the chutney thickens.
- Remove from heat and let it cool slightly before transferring to a serving bowl.
- Garnish with chopped coriander leaves before serving.
