Ingredients

  • Raw rice - 1 cup (200g)
  • Water - 3 cups (750ml)
  • Salt - 1/2 teaspoon
  • Coconut oil - for cooking

Steps

  1. Rinse the raw rice thoroughly under cold water until the water runs clear, then soak the rice in water for at least 4-6 hours or overnight.
  2. Drain the soaked rice and transfer it to a blender. Add 2 cups of fresh water and blend until you achieve a smooth, thin batter.
  3. Pour the batter into a bowl and mix in the salt. If the batter is too thick, add a little more water to reach a pourable consistency.
  4. Heat a non-stick skillet or dosa pan over medium heat and lightly grease it with coconut oil.
  5. Once the pan is hot, pour a ladleful of the batter onto the center of the pan and quickly swirl it around to form a thin, even layer.
  6. Cook for about 1-2 minutes until the edges lift and the surface appears set, then carefully remove the dosa using a spatula.
  7. Repeat the process with the remaining batter, greasing the pan as necessary. Serve hot with coconut chutney or your choice of curry.
