- Potatoes - 200 grams
- Green chilies - 2, finely chopped
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Mustard seeds - 1 teaspoon
- Turmeric powder - 1/4 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Lemon juice - 1 tablespoon
- Fresh coriander - 2 tablespoons, chopped
- Chickpea flour (besan) - 1 cup
- Water - 1/2 cup (for batter)
- Buns ( pav) - 2
- Oil - for frying
- Green chutney - for serving
- Sweet chutney - for serving
- Fried green chilies - for serving
Steps
- Boil the potatoes in water until fork-tender, then peel and mash them in a bowl.
- In a pan, heat 1 tablespoon of oil and add mustard seeds. Once they splutter, add chopped green chilies, ginger, and garlic; sauté for 1-2 minutes.
- Add turmeric powder, coriander powder, cumin powder, and salt to the pan. Mix well and cook for another minute.
- Add the mashed potatoes to the pan along with lemon juice and fresh coriander. Mix until well combined. Let the mixture cool, then form into two round patties.
- In a bowl, combine chickpea flour, water, and a pinch of salt to make a smooth batter.
- Heat oil in a deep frying pan over medium heat. Dip each potato patty into the batter, ensuring it is well coated, then carefully place it in the hot oil.
- Fry until golden brown and crispy, about 4-5 minutes on each side. Remove and drain on paper towels.
- Slice the pav buns and spread some green chutney and sweet chutney inside.
- Place the fried vada inside the bun, and serve with fried green chilies on the side.
