Ingredients

  • Potatoes - 200 grams
  • Green chilies - 2, finely chopped
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Mustard seeds - 1 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh coriander - 2 tablespoons, chopped
  • Chickpea flour (besan) - 1 cup
  • Water - 1/2 cup (for batter)
  • Buns ( pav) - 2
  • Oil - for frying
  • Green chutney - for serving
  • Sweet chutney - for serving
  • Fried green chilies - for serving

Steps

  1. Boil the potatoes in water until fork-tender, then peel and mash them in a bowl.
  2. In a pan, heat 1 tablespoon of oil and add mustard seeds. Once they splutter, add chopped green chilies, ginger, and garlic; sauté for 1-2 minutes.
  3. Add turmeric powder, coriander powder, cumin powder, and salt to the pan. Mix well and cook for another minute.
  4. Add the mashed potatoes to the pan along with lemon juice and fresh coriander. Mix until well combined. Let the mixture cool, then form into two round patties.
  5. In a bowl, combine chickpea flour, water, and a pinch of salt to make a smooth batter.
  6. Heat oil in a deep frying pan over medium heat. Dip each potato patty into the batter, ensuring it is well coated, then carefully place it in the hot oil.
  7. Fry until golden brown and crispy, about 4-5 minutes on each side. Remove and drain on paper towels.
  8. Slice the pav buns and spread some green chutney and sweet chutney inside.
  9. Place the fried vada inside the bun, and serve with fried green chilies on the side.
