- Potatoes - 200 grams
- Green chilies - 2, finely chopped
- Ginger - 1 teaspoon, grated
- Coriander leaves - 2 tablespoons, chopped
- Mustard seeds - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - 1 teaspoon
- Lemon juice - 1 teaspoon
- Gram flour (besan) - 100 grams
- Rice flour - 2 tablespoons
- Baking soda - a pinch
- Water - as needed
- Oil - for deep frying
Steps
- Boil the potatoes in a pot until tender, then peel and mash them in a bowl.
- In a pan, heat a teaspoon of oil and add mustard seeds until they pop, then add cumin seeds, green chilies, and ginger, stirring for 1-2 minutes.
- Add the turmeric powder, salt, and chopped coriander leaves to the potato mash, then mix well. Finally, add lemon juice and mix again.
- Form the potato mixture into small balls or patties and set aside.
- In a separate bowl, mix gram flour, rice flour, baking soda, and salt. Gradually add water to make a smooth batter of medium thickness.
- Heat oil in a deep frying pan over medium heat. Dip each potato ball into the batter, ensuring it is fully coated, and carefully drop it into the hot oil.
- Fry the vadas in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.
- Serve hot with green chutney or tamarind chutney.
