Ingredients

  • Split yellow gram (Chana dal) - 100 grams
  • Jaggery (grated) - 75 grams
  • Cardamom powder - 1/2 teaspoon
  • Nutmeg powder - 1/4 teaspoon
  • Coconut (grated, fresh or desiccated) - 2 tablespoons
  • Rice flour - 1 cup
  • Water - 1/2 cup
  • Ghee (for cooking) - 2 tablespoons
  • Salt - a pinch

Steps

  1. Rinse the split yellow gram and soak it in water for about 30 minutes.
  2. Drain the soaked dal and cook it in a pressure cooker with enough water for about 3-4 whistles, or until soft.
  3. Once cooked, drain any excess water and mash the dal well.
  4. In a pan, add the mashed dal, grated jaggery, cardamom powder, nutmeg powder, and grated coconut. Cook on low heat until the mixture thickens and the jaggery melts completely, stirring frequently. Let it cool.
  5. In a bowl, combine the rice flour and a pinch of salt. Gradually add water to form a soft dough. Knead for a few minutes and let it rest for 15 minutes.
  6. Divide the dough into equal portions (about 4 balls). Similarly, divide the puran (filling) into equal portions.
  7. Take one dough ball, flatten it, and place a filling ball in the center. Wrap the dough around the filling and flatten it gently.
  8. Roll out the stuffed dough into a circle, about 6-7 inches in diameter, using rice flour to prevent sticking.
  9. Heat a skillet over medium heat and cook the rolled-out puran poli on both sides, applying ghee until golden brown and cooked through.
  10. Repeat the process for the remaining dough and filling. Serve hot with ghee or milk.
