- Sprouted moth beans - 200 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Green chili - 1, slit
- Ginger-garlic paste - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Oil - 2 tablespoons
- Salt - to taste
- Cilantro - for garnish
- Farsan (crunchy snack mix) - for topping
- Lemon wedges - for serving
- Pav (bread rolls) - 2
Steps
- Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn translucent.
- Add the ginger-garlic paste and slit green chili, stir for another minute until fragrant.
- Mix in the chopped tomatoes and cook until they soften, then add turmeric, red chili powder, coriander powder, and salt. Stir well.
- Add the sprouted moth beans to the pan, mix to coat them in the spices, and cook for 5 minutes.
- Pour in enough water to cover the mixture, bring to a boil, then reduce to a simmer. Cook for 10-15 minutes until the beans are tender and the flavors meld.
- Once cooked, sprinkle garam masala and mix well. Adjust salt if necessary.
- Serve hot, garnished with chopped cilantro and topped with farsan. Accompany with lemon wedges and pav on the side.
