Ingredients

  • Sprouted moth beans - 200 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Green chili - 1, slit
  • Ginger-garlic paste - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Oil - 2 tablespoons
  • Salt - to taste
  • Cilantro - for garnish
  • Farsan (crunchy snack mix) - for topping
  • Lemon wedges - for serving
  • Pav (bread rolls) - 2

Steps

  1. Heat oil in a pan over medium heat. Add chopped onions and sauté until they turn translucent.
  2. Add the ginger-garlic paste and slit green chili, stir for another minute until fragrant.
  3. Mix in the chopped tomatoes and cook until they soften, then add turmeric, red chili powder, coriander powder, and salt. Stir well.
  4. Add the sprouted moth beans to the pan, mix to coat them in the spices, and cook for 5 minutes.
  5. Pour in enough water to cover the mixture, bring to a boil, then reduce to a simmer. Cook for 10-15 minutes until the beans are tender and the flavors meld.
  6. Once cooked, sprinkle garam masala and mix well. Adjust salt if necessary.
  7. Serve hot, garnished with chopped cilantro and topped with farsan. Accompany with lemon wedges and pav on the side.
