- Basmati rice - 1 cup
- Water - 2 cups
- Oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Ginger (grated) - 1 teaspoon
- Garlic (minced) - 1 teaspoon
- Onion (finely chopped) - 1 medium
- Green peas - 1/2 cup
- Carrot (diced) - 1/2 medium
- Coriander leaves (chopped) - 2 tablespoons
- Salt - to taste
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak for 20 minutes.
- In a pot, heat the oil over medium heat and add cumin seeds and mustard seeds. Let them splutter.
- Add the chopped onion, ginger, and garlic. Sauté until the onion turns golden brown.
- Stir in the turmeric powder, red chili powder, diced carrot, and green peas. Cook for 5 minutes until the vegetables soften.
- Drain the soaked rice and add it to the pot, stirring gently to combine with the spices and vegetables.
- Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low and cover the pot.
- Cook for about 15 minutes or until the rice is tender and the water is absorbed.
- Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
- Add lemon juice and chopped coriander leaves, mixing gently before serving.
