Ingredients

  • Potatoes - 300 grams
  • Green chilies - 2, finely chopped
  • Ginger - 1 inch, grated
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 8-10 leaves
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1 teaspoon (adjust to taste)
  • Lemon juice - 1 tablespoon
  • Fresh coriander - 2 tablespoons, chopped
  • Gram flour (besan) - 100 grams
  • Rice flour - 2 tablespoons
  • Water - 100-150 ml
  • Oil - for deep frying

Steps

  1. Boil the potatoes in salted water until tender, then peel and mash them in a bowl.
  2. In a pan, heat 1 tablespoon of oil and add mustard seeds. Once they splutter, add curry leaves, green chilies, and ginger. Sauté for 1-2 minutes.
  3. Add turmeric powder, coriander powder, cumin powder, and salt to the pan. Mix well and cook for another minute.
  4. Combine the sautéed mixture with the mashed potatoes, add lemon juice and fresh coriander, and mix thoroughly. Allow the mixture to cool.
  5. Shape the potato mixture into small balls or patties and set aside.
  6. In a bowl, mix gram flour, rice flour, and salt with enough water to make a thick batter.
  7. Heat oil in a deep frying pan over medium heat.
  8. Dip each potato ball into the batter, ensuring it is fully coated, and carefully drop it into the hot oil.
  9. Fry in batches until golden brown and crisp, about 4-5 minutes per batch. Drain on paper towels.
  10. Serve hot with green chutney and bread rolls.
