- Potatoes - 300 grams
- Green chilies - 2, finely chopped
- Ginger - 1 inch, grated
- Mustard seeds - 1 teaspoon
- Curry leaves - 8-10 leaves
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1 teaspoon (adjust to taste)
- Lemon juice - 1 tablespoon
- Fresh coriander - 2 tablespoons, chopped
- Gram flour (besan) - 100 grams
- Rice flour - 2 tablespoons
- Water - 100-150 ml
- Oil - for deep frying
Steps
- Boil the potatoes in salted water until tender, then peel and mash them in a bowl.
- In a pan, heat 1 tablespoon of oil and add mustard seeds. Once they splutter, add curry leaves, green chilies, and ginger. Sauté for 1-2 minutes.
- Add turmeric powder, coriander powder, cumin powder, and salt to the pan. Mix well and cook for another minute.
- Combine the sautéed mixture with the mashed potatoes, add lemon juice and fresh coriander, and mix thoroughly. Allow the mixture to cool.
- Shape the potato mixture into small balls or patties and set aside.
- In a bowl, mix gram flour, rice flour, and salt with enough water to make a thick batter.
- Heat oil in a deep frying pan over medium heat.
- Dip each potato ball into the batter, ensuring it is fully coated, and carefully drop it into the hot oil.
- Fry in batches until golden brown and crisp, about 4-5 minutes per batch. Drain on paper towels.
- Serve hot with green chutney and bread rolls.
