Ingredients

  • Lobster meat - 200 grams
  • Coconut flour - 100 grams
  • Egg - 1 large
  • Coconut oil - 2 tablespoons
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cucumber - 1 small, sliced
  • Avocado - 1 small, sliced

Steps

  1. In a mixing bowl, combine the coconut flour, egg, and a pinch of salt. Mix until a dough forms.
  2. Heat a non-stick pan over medium heat and add 1 tablespoon of coconut oil. Shape the coconut flour dough into two flat rounds and cook for about 3-4 minutes on each side until golden brown. Set aside.
  3. In another bowl, mix the lobster meat, minced garlic, grated ginger, chopped green chili, chopped coriander, lemon juice, salt, and black pepper. Ensure the lobster is well coated with the spices.
  4. In the same pan, add 1 tablespoon of coconut oil and warm the lobster mixture on low heat for about 2-3 minutes until heated through.
  5. To assemble the rolls, place a portion of the lobster mixture onto each coconut flour wrap. Top with sliced cucumber and avocado.
  6. Fold the wraps over the filling and serve immediately.
