- Lobster meat - 200 grams
- Coconut flour - 100 grams
- Egg - 1 large
- Coconut oil - 2 tablespoons
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Garlic - 1 clove, minced
- Ginger - 1 teaspoon, grated
- Green chili - 1, finely chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cucumber - 1 small, sliced
- Avocado - 1 small, sliced
Steps
- In a mixing bowl, combine the coconut flour, egg, and a pinch of salt. Mix until a dough forms.
- Heat a non-stick pan over medium heat and add 1 tablespoon of coconut oil. Shape the coconut flour dough into two flat rounds and cook for about 3-4 minutes on each side until golden brown. Set aside.
- In another bowl, mix the lobster meat, minced garlic, grated ginger, chopped green chili, chopped coriander, lemon juice, salt, and black pepper. Ensure the lobster is well coated with the spices.
- In the same pan, add 1 tablespoon of coconut oil and warm the lobster mixture on low heat for about 2-3 minutes until heated through.
- To assemble the rolls, place a portion of the lobster mixture onto each coconut flour wrap. Top with sliced cucumber and avocado.
- Fold the wraps over the filling and serve immediately.
