Ingredients
- Whole wheat flour - 1 cup
- Gram flour (besan) - 1/2 cup
- Water - 1/4 cup (for dough)
- Water - 1/4 cup (for stuffing)
- Ghee or oil - 2 tablespoons
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Salt - to taste
- Boiled potatoes - 1 medium, mashed
- Eggplant - 1 small, roasted and mashed
- Tomato - 1 small, finely chopped
- Green chili - 1, finely chopped
- Fresh coriander - 2 tablespoons, chopped
- Onion - 1 small, finely chopped
Steps
- In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to form a soft dough. Cover and let it rest for 30 minutes.
- In another bowl, mix the gram flour, ghee, cumin seeds, turmeric powder, red chili powder, and salt to taste. Add a little water to make a smooth stuffing.
- Divide the gram flour mixture into small balls and set aside.
- Roll small portions of the wheat dough into circles, place a ball of the gram flour stuffing in the center, and seal the dough round to form a ball.
- Preheat the oven to 200°C (400°F) or prepare a charcoal fire for traditional roasting.
- If using an oven, place the littis on a baking tray and bake for 25-30 minutes until golden brown, turning halfway through. For charcoal, roast the littis directly over the heat until golden and cooked through.
- While the littis are cooking, prepare the chokha by mixing the mashed potatoes, roasted and mashed eggplant, chopped tomato, green chili, onion, and fresh coriander in a bowl. Season with salt to taste.
- Once the littis are done, serve them hot with the chokha on the side.
