Litti Chokha

Litti Chokha is a traditional Bihari dish that combines roasted whole wheat balls (litti) stuffed with spiced gram flour, served alongside a flavorful mashed vegetable mix (chokha). This hearty breakfast provides a deliciously rustic taste of Indian cuisine.

Ingredients

  • Whole wheat flour - 1 cup
  • Gram flour (besan) - 1/2 cup
  • Water - 1/4 cup (for dough)
  • Water - 1/4 cup (for stuffing)
  • Ghee or oil - 2 tablespoons
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Salt - to taste
  • Boiled potatoes - 1 medium, mashed
  • Eggplant - 1 small, roasted and mashed
  • Tomato - 1 small, finely chopped
  • Green chili - 1, finely chopped
  • Fresh coriander - 2 tablespoons, chopped
  • Onion - 1 small, finely chopped

Steps

  1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to form a soft dough. Cover and let it rest for 30 minutes.
  2. In another bowl, mix the gram flour, ghee, cumin seeds, turmeric powder, red chili powder, and salt to taste. Add a little water to make a smooth stuffing.
  3. Divide the gram flour mixture into small balls and set aside.
  4. Roll small portions of the wheat dough into circles, place a ball of the gram flour stuffing in the center, and seal the dough round to form a ball.
  5. Preheat the oven to 200°C (400°F) or prepare a charcoal fire for traditional roasting.
  6. If using an oven, place the littis on a baking tray and bake for 25-30 minutes until golden brown, turning halfway through. For charcoal, roast the littis directly over the heat until golden and cooked through.
  7. While the littis are cooking, prepare the chokha by mixing the mashed potatoes, roasted and mashed eggplant, chopped tomato, green chili, onion, and fresh coriander in a bowl. Season with salt to taste.
  8. Once the littis are done, serve them hot with the chokha on the side.
