- Red lentils - 100 grams
- Cauliflower, chopped - 100 grams
- Spinach, chopped - 50 grams
- Carrot, diced - 50 grams
- Onion, finely chopped - 50 grams
- Garlic, minced - 2 cloves
- Ginger, grated - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Coconut oil - 1 tablespoon
- Vegetable broth - 500 ml
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh cilantro, chopped - for garnish
Steps
- In a pot, heat the coconut oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add the chopped onion, garlic, and ginger. Sauté until the onion becomes translucent.
- Stir in the turmeric and coriander powder, cooking for another minute until fragrant.
- Add the diced carrots and chopped cauliflower, cooking for about 5 minutes until they start to soften.
- Rinse the red lentils and add them to the pot along with the vegetable broth. Bring to a boil.
- Reduce the heat and simmer for 15 minutes, or until the lentils and vegetables are tender.
- Stir in the chopped spinach and cook for an additional 2-3 minutes until wilted.
- Season with salt, black pepper, and lemon juice. Adjust seasoning to taste.
- Serve hot, garnished with fresh cilantro.
