- Brown lentils - 100 grams
- Water - 500 ml
- Cucumber - 1 small, diced
- Tomato - 1 medium, diced
- Red onion - 1 small, finely chopped
- Fresh coriander - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the brown lentils under cold water until the water runs clear.
- In a pot, combine the rinsed lentils and water. Bring to a boil over medium heat.
- Once boiling, reduce heat to low and simmer for about 20-25 minutes until the lentils are tender but not mushy.
- Drain the lentils and let them cool for a few minutes.
- In a large mixing bowl, combine the diced cucumber, tomato, red onion, and coriander.
- Add the cooled lentils to the mixing bowl.
- In a small bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and black pepper.
- Pour the dressing over the lentil and vegetable mixture and toss gently to combine.
- Taste and adjust seasoning if necessary, then serve immediately or chill in the refrigerator for 30 minutes before serving.
