Ingredients

  • Brown lentils - 100 grams
  • Water - 500 ml
  • Cucumber - 1 small, diced
  • Tomato - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh coriander - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the brown lentils under cold water until the water runs clear.
  2. In a pot, combine the rinsed lentils and water. Bring to a boil over medium heat.
  3. Once boiling, reduce heat to low and simmer for about 20-25 minutes until the lentils are tender but not mushy.
  4. Drain the lentils and let them cool for a few minutes.
  5. In a large mixing bowl, combine the diced cucumber, tomato, red onion, and coriander.
  6. Add the cooled lentils to the mixing bowl.
  7. In a small bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and black pepper.
  8. Pour the dressing over the lentil and vegetable mixture and toss gently to combine.
  9. Taste and adjust seasoning if necessary, then serve immediately or chill in the refrigerator for 30 minutes before serving.
