Lentil Burger

Ingredients
- Red lentils - 100 grams
- Water - 300 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch, grated
- Green chili - 1, finely chopped
- Coriander powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - 1 teaspoon (or to taste)
- Fresh coriander leaves - 2 tablespoons, chopped
- Breadcrumbs - 50 grams
- Oil - for frying (about 2 tablespoons)
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Yogurt - 2 tablespoons (optional, for serving)
Steps
- Rinse the red lentils under cold water until the water runs clear. In a pot, combine the lentils and water, then bring to a boil. Reduce heat and simmer for about 15 minutes, or until the lentils are soft and water is mostly absorbed.
- In a pan, heat 1 tablespoon of oil over medium heat. Add the chopped onion, garlic, ginger, and green chili. Sauté until the onions are translucent.
- Add the coriander powder, cumin powder, turmeric powder, and salt to the onion mixture. Stir and cook for another 2-3 minutes until fragrant.
- Combine the cooked lentils, sautéed onion mixture, garam masala, fresh coriander leaves, and breadcrumbs in a bowl. Mix well and mash slightly until combined. Let the mixture cool for a few minutes.
- Divide the lentil mixture into two equal portions and shape them into patties.
- In the same pan, add the remaining oil and heat over medium heat. Fry the lentil patties for about 4-5 minutes on each side, or until golden brown and crispy.
- To assemble the burgers, place a lettuce leaf on each burger bun, followed by a lentil patty, sliced tomato, and cucumber. Add yogurt on top if desired, then close the buns.
- Serve the lentil burgers warm with your favorite side.
