Ingredients

  • Basmati rice - 150 grams
  • Water - 300 ml
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Dried red chilies - 2
  • Green chili - 1, slit
  • Peanuts - 30 grams
  • Curry leaves - 10 leaves
  • Oil - 2 tablespoons
  • Fresh coriander - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.
  2. In a pot, bring 300 ml of water to a boil. Add the soaked rice, turmeric powder, and salt. Cover and cook on low heat for about 15 minutes, or until the rice is tender and all the water is absorbed.
  3. While the rice is cooking, heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
  4. Add cumin seeds, dried red chilies, and slit green chili to the pan. Sauté for a minute until fragrant.
  5. Add peanuts and curry leaves to the pan, and continue to sauté for another 2-3 minutes until the peanuts are golden.
  6. Once the rice is cooked, fluff it with a fork and add it to the pan with the spices. Pour in the lemon juice and mix everything gently, ensuring the rice is well coated with the spices.
  7. Cook for an additional 2-3 minutes to heat through, then remove from heat.
  8. Garnish with fresh coriander before serving.
