Ingredients
- Basmati rice - 150 grams
- Water - 300 ml
- Turmeric powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Lemon juice - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Dried red chilies - 2
- Green chili - 1, slit
- Peanuts - 30 grams
- Curry leaves - 10 leaves
- Oil - 2 tablespoons
- Fresh coriander - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.
- In a pot, bring 300 ml of water to a boil. Add the soaked rice, turmeric powder, and salt. Cover and cook on low heat for about 15 minutes, or until the rice is tender and all the water is absorbed.
- While the rice is cooking, heat oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds, dried red chilies, and slit green chili to the pan. Sauté for a minute until fragrant.
- Add peanuts and curry leaves to the pan, and continue to sauté for another 2-3 minutes until the peanuts are golden.
- Once the rice is cooked, fluff it with a fork and add it to the pan with the spices. Pour in the lemon juice and mix everything gently, ensuring the rice is well coated with the spices.
- Cook for an additional 2-3 minutes to heat through, then remove from heat.
- Garnish with fresh coriander before serving.
