- Fresh coriander leaves - 30 grams, chopped
- Lemon juice - 30 ml
- Lemon zest - 1 teaspoon
- Ginger - 1 teaspoon, grated
- Garlic - 1 clove, minced
- Green chili - 1, finely chopped
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Vegetable broth - 250 ml
- Carrot - 1 small, diced
- Onion - 1/2, finely chopped
- Tomato - 1 small, chopped
Steps
- In a saucepan, heat the olive oil over medium heat. Add the chopped onion, ginger, garlic, and green chili. Sauté until the onion becomes translucent.
- Add the diced carrot and chopped tomato to the pan, cooking for an additional 5 minutes until they soften.
- Pour in the water and vegetable broth, bringing the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
- Stir in the chopped coriander leaves, lemon juice, lemon zest, salt, and black pepper. Simmer for another 5 minutes.
- Remove from heat and blend the soup for a smooth consistency, if desired. Alternatively, leave it chunky for more texture.
- Serve hot, garnished with additional coriander leaves and a slice of lemon on the side.
