Ingredients

  • Water - 500 ml
  • Fresh coriander leaves - 30 grams, chopped
  • Lemon juice - 30 ml
  • Lemon zest - 1 teaspoon
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 clove, minced
  • Green chili - 1, finely chopped
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Vegetable broth - 250 ml
  • Carrot - 1 small, diced
  • Onion - 1/2, finely chopped
  • Tomato - 1 small, chopped

Steps

  1. In a saucepan, heat the olive oil over medium heat. Add the chopped onion, ginger, garlic, and green chili. Sauté until the onion becomes translucent.
  2. Add the diced carrot and chopped tomato to the pan, cooking for an additional 5 minutes until they soften.
  3. Pour in the water and vegetable broth, bringing the mixture to a boil.
  4. Once boiling, reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
  5. Stir in the chopped coriander leaves, lemon juice, lemon zest, salt, and black pepper. Simmer for another 5 minutes.
  6. Remove from heat and blend the soup for a smooth consistency, if desired. Alternatively, leave it chunky for more texture.
  7. Serve hot, garnished with additional coriander leaves and a slice of lemon on the side.
