  • Bottle gourd (lauki) - 300 grams, peeled and diced
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Ginger-garlic paste - 1 teaspoon
  • Green chili - 1, slit (adjust to taste)
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Oil - 1 tablespoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add finely chopped onions and sauté until they turn translucent.
  3. Stir in the ginger-garlic paste and green chili, cooking for another minute until fragrant.
  4. Add the chopped tomato and cook until it softens and blends with the onions.
  5. Mix in turmeric powder, coriander powder, and salt, cooking for a couple of minutes.
  6. Add the diced bottle gourd, stirring well to coat the pieces with the spice mixture.
  7. Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally, until the lauki is tender.
  8. Once cooked, sprinkle garam masala over the sabzi and mix well.
  9. Garnish with fresh coriander leaves before serving.
