- Ginger-garlic paste - 1 teaspoon
- Green chili - 1, slit (adjust to taste)
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Oil - 1 tablespoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add finely chopped onions and sauté until they turn translucent.
- Stir in the ginger-garlic paste and green chili, cooking for another minute until fragrant.
- Add the chopped tomato and cook until it softens and blends with the onions.
- Mix in turmeric powder, coriander powder, and salt, cooking for a couple of minutes.
- Add the diced bottle gourd, stirring well to coat the pieces with the spice mixture.
- Cover the pan and cook on low heat for 10-15 minutes, stirring occasionally, until the lauki is tender.
- Once cooked, sprinkle garam masala over the sabzi and mix well.
- Garnish with fresh coriander leaves before serving.
