  • Diced tomatoes - 400 grams (canned or fresh)
  • Beef broth - 500 ml
  • Olive oil - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bay leaf - 1
  • Fresh parsley - for garnish (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.
  2. Add the cubed bison meat to the pot, browning it on all sides for about 7-10 minutes.
  3. Stir in the diced carrots and celery, cooking for an additional 5 minutes until they start to soften.
  4. Pour in the diced tomatoes and beef broth, then add dried thyme, oregano, salt, black pepper, and the bay leaf. Stir well to combine.
  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 60 minutes, stirring occasionally.
  6. After 60 minutes, check the bison for tenderness. If it’s not tender enough, continue to simmer for an additional 15-30 minutes.
  7. Once the bison is tender, remove the bay leaf and adjust seasoning to taste. Serve hot, garnished with freshly chopped parsley if desired.
