Ingredients

  • Bison ground meat - 250 grams
  • Wild rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Mushrooms - 100 grams, sliced
  • Carrot - 1 medium, diced
  • Chicken broth - 500 ml
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Rinse the wild rice under cold water and soak it in water for 30 minutes.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Add the bison ground meat to the skillet and cook until browned, breaking it up with a spatula.
  4. Stir in the diced carrot and sliced mushrooms, cooking for an additional 5 minutes until the vegetables are softened.
  5. Drain the soaked wild rice and add it to the skillet, stirring well to combine.
  6. Pour in the chicken broth, add the thyme, salt, and black pepper, and bring the mixture to a boil.
  7. Reduce the heat to low, cover, and simmer for about 25-30 minutes, or until the wild rice is tender and has absorbed the liquid.
  8. Remove from heat, fluff the rice with a fork, and let it sit for 5 minutes before serving.
  9. Garnish with chopped parsley and serve warm.
