Steps
- In a mixing bowl, combine the buckwheat flour, mashed potato, cumin seeds, salt, and chopped coriander leaves.
- Gradually add water to the mixture and knead it into a smooth dough. Adjust the water quantity as needed to achieve the right consistency.
- Divide the dough into two equal portions and shape them into balls.
- On a flat surface, dust with a little buckwheat flour and roll out each ball into a circle about 6 inches in diameter.
- Heat a non-stick skillet over medium heat and lightly grease it with oil.
- Place a rolled-out roti on the skillet and cook for about 2-3 minutes on each side, or until golden brown spots appear.
- Repeat with the second roti, and serve hot with your favorite chutney or yogurt.
