- Okra - 250 grams
- Besan (gram flour) - 50 grams
- Rice flour - 25 grams
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Baking soda - a pinch
- Water - as needed
- Oil - for frying
Steps
- Wash the okra thoroughly and pat them dry with a kitchen towel to remove excess moisture.
- Trim the ends of the okra and cut them into thin strips (about 1/2 cm thick).
- In a mixing bowl, combine besan, rice flour, turmeric powder, red chili powder, cumin powder, garam masala, salt, and baking soda.
- Gradually add water to the dry ingredients, mixing until you achieve a smooth batter that coats the back of a spoon (not too thick or thin).
- Add the okra strips to the batter and mix well to ensure they are evenly coated.
- Heat oil in a deep pan or kadhai over medium heat for frying.
- Once the oil is hot, drop the coated okra strips in batches, making sure not to overcrowd the pan.
- Fry until the okra is golden brown and crispy, about 4-5 minutes per batch, turning occasionally for even cooking.
- Remove the fried okra using a slotted spoon and drain on a paper towel to absorb excess oil.
- Serve hot with a side of mint chutney or tamarind sauce.
