Ingredients

  • Okra - 250 grams
  • Besan (gram flour) - 50 grams
  • Rice flour - 25 grams
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Baking soda - a pinch
  • Water - as needed
  • Oil - for frying

Steps

  1. Wash the okra thoroughly and pat them dry with a kitchen towel to remove excess moisture.
  2. Trim the ends of the okra and cut them into thin strips (about 1/2 cm thick).
  3. In a mixing bowl, combine besan, rice flour, turmeric powder, red chili powder, cumin powder, garam masala, salt, and baking soda.
  4. Gradually add water to the dry ingredients, mixing until you achieve a smooth batter that coats the back of a spoon (not too thick or thin).
  5. Add the okra strips to the batter and mix well to ensure they are evenly coated.
  6. Heat oil in a deep pan or kadhai over medium heat for frying.
  7. Once the oil is hot, drop the coated okra strips in batches, making sure not to overcrowd the pan.
  8. Fry until the okra is golden brown and crispy, about 4-5 minutes per batch, turning occasionally for even cooking.
  9. Remove the fried okra using a slotted spoon and drain on a paper towel to absorb excess oil.
  10. Serve hot with a side of mint chutney or tamarind sauce.
