- Full-fat milk - 500 ml
- Condensed milk - 100 g
- Sugar - 50 g
- Heavy cream - 100 ml
- Cardamom powder - 1/2 tsp
- Pistachios (chopped) - 2 tbsp
- Saffron strands - a pinch
- Rose water - 1 tsp
Steps
- In a saucepan, bring the full-fat milk to a boil over medium heat, stirring occasionally.
- Once it boils, reduce the heat and let it simmer for about 10-15 minutes, allowing it to reduce slightly.
- Add the sugar, condensed milk, and cardamom powder to the milk, stirring well to combine.
- Continue to simmer for another 5 minutes, ensuring the sugar is fully dissolved.
- Remove the mixture from heat and stir in the heavy cream, saffron strands, and rose water.
- Let the mixture cool to room temperature, then pour it into kulfi molds or small cups.
- Sprinkle chopped pistachios on top of each mold.
- Cover with a lid or plastic wrap and freeze for at least 6 hours or until completely set.
- To serve, remove the kulfi from the molds by dipping them in warm water for a few seconds.
