Ingredients

  • Chicken pieces - 400 grams
  • Rice flour - 50 grams
  • Corn flour - 30 grams
  • Ginger-garlic paste - 1 tablespoon
  • Red chili powder - 2 teaspoons
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh curry leaves - a handful
  • Oil for deep frying - as needed

Steps

  1. In a large bowl, combine the chicken pieces with ginger-garlic paste, red chili powder, turmeric powder, coriander powder, garam masala, salt, and lemon juice. Mix well to coat the chicken evenly.
  2. Cover the bowl and marinate the chicken in the refrigerator for at least 30 minutes to enhance the flavors.
  3. In a separate bowl, mix the rice flour and corn flour together.
  4. Heat oil in a deep frying pan over medium heat.
  5. Once the oil is hot, take each marinated chicken piece and coat it generously with the rice and corn flour mixture.
  6. Carefully place the coated chicken pieces in the hot oil, making sure not to overcrowd the pan.
  7. Fry the chicken until golden brown and cooked through, about 7-8 minutes per side.
  8. Remove the fried chicken and drain on paper towels to absorb excess oil.
  9. Garnish with fresh curry leaves and serve hot.
