Ingredients

  • Chicken, bone-in, skinless - 400 grams
  • Coconut, grated - 50 grams
  • Onion, finely chopped - 1 medium
  • Tomato, chopped - 1 medium
  • Ginger, minced - 1 teaspoon
  • Garlic, minced - 1 teaspoon
  • Green chilies, slit - 2
  • Curry leaves - 10 leaves
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Oil (coconut or vegetable) - 2 tablespoons
  • Salt - to taste
  • Water - 150 ml

Steps

  1. Heat the oil in a deep pan over medium heat. Add the grated coconut and roast until golden brown, then remove and set aside.
  2. In the same pan, add the chopped onions and sauté until they turn translucent.
  3. Add the minced ginger, garlic, green chilies, and curry leaves, and cook for another 2-3 minutes until fragrant.
  4. Stir in the chopped tomatoes and cook until they soften, about 5 minutes.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes.
  6. Add the chicken pieces to the pan, stirring to coat them in the spice mixture. Cook for about 5 minutes until the chicken starts to brown.
  7. Pour in the water and bring to a boil. Reduce heat, cover, and let simmer for 25 minutes, or until the chicken is fully cooked and tender.
  8. In the last few minutes of cooking, add the roasted coconut and garam masala. Stir well and adjust seasoning if necessary.
  9. Serve hot with rice or flatbreads.
