Ingredients
- Chicken, bone-in, skinless - 400 grams
- Coconut, grated - 50 grams
- Onion, finely chopped - 1 medium
- Tomato, chopped - 1 medium
- Ginger, minced - 1 teaspoon
- Garlic, minced - 1 teaspoon
- Green chilies, slit - 2
- Curry leaves - 10 leaves
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Oil (coconut or vegetable) - 2 tablespoons
- Salt - to taste
- Water - 150 ml
Steps
- Heat the oil in a deep pan over medium heat. Add the grated coconut and roast until golden brown, then remove and set aside.
- In the same pan, add the chopped onions and sauté until they turn translucent.
- Add the minced ginger, garlic, green chilies, and curry leaves, and cook for another 2-3 minutes until fragrant.
- Stir in the chopped tomatoes and cook until they soften, about 5 minutes.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2 minutes.
- Add the chicken pieces to the pan, stirring to coat them in the spice mixture. Cook for about 5 minutes until the chicken starts to brown.
- Pour in the water and bring to a boil. Reduce heat, cover, and let simmer for 25 minutes, or until the chicken is fully cooked and tender.
- In the last few minutes of cooking, add the roasted coconut and garam masala. Stir well and adjust seasoning if necessary.
- Serve hot with rice or flatbreads.
