- Chicken, bone-in, skinless - 400 grams
- Coconut oil - 2 tablespoons

- Garlic, minced - 4 cloves
- Ginger, grated - 1 tablespoon
- Green chilies, slit - 2
- Tomato, chopped - 1 medium (100 grams)
- Coconut milk - 200 ml
- Turmeric powder - 1 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 tablespoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves, chopped - for garnish
Steps
- Heat coconut oil in a large pan over medium heat.
- Add the chopped onions and sauté until they turn golden brown, about 5-7 minutes.
- Stir in the minced garlic, grated ginger, and slit green chilies, and cook for another 2 minutes until fragrant.
- Add the chopped tomatoes and cook until they soften, about 5 minutes.
- Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt, mixing well to combine.
- Add the chicken pieces to the pan and sauté until they are sealed on all sides, about 5 minutes.
- Pour in the coconut milk and bring the mixture to a simmer.
- Cover the pan and let it cook for 20 minutes, or until the chicken is fully cooked and tender.
- Stir in the garam masala and cook for an additional 2 minutes.
- Garnish with fresh coriander leaves before serving.
