Ingredients

  • Chicken, bone-in, skinless - 400 grams
  • Coconut oil - 2 tablespoons
  • Onion, finely chopped - 1 medium (150 grams)
  • Garlic, minced - 4 cloves
  • Ginger, grated - 1 tablespoon
  • Green chilies, slit - 2
  • Tomato, chopped - 1 medium (100 grams)
  • Coconut milk - 200 ml
  • Turmeric powder - 1 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 tablespoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves, chopped - for garnish

Steps

  1. Heat coconut oil in a large pan over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown, about 5-7 minutes.
  3. Stir in the minced garlic, grated ginger, and slit green chilies, and cook for another 2 minutes until fragrant.
  4. Add the chopped tomatoes and cook until they soften, about 5 minutes.
  5. Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt, mixing well to combine.
  6. Add the chicken pieces to the pan and sauté until they are sealed on all sides, about 5 minutes.
  7. Pour in the coconut milk and bring the mixture to a simmer.
  8. Cover the pan and let it cook for 20 minutes, or until the chicken is fully cooked and tender.
  9. Stir in the garam masala and cook for an additional 2 minutes.
  10. Garnish with fresh coriander leaves before serving.
