Ingredients

  • Fish (preferably pomfret or salmon) - 300 grams
  • Coconut oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Ginger (grated) - 1 tablespoon
  • Garlic (minced) - 1 tablespoon
  • Tomato (chopped) - 1 medium
  • Kashmiri red chili powder - 1 tablespoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 tablespoon
  • Coconut milk - 200 ml
  • Tamarind paste - 1 tablespoon
  • Salt - to taste
  • Curry leaves - a handful
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Heat coconut oil in a pan over medium heat.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Stir in the grated ginger and minced garlic, and sauté for another minute until fragrant.
  4. Add the chopped tomatoes and cook until they soften, about 3-4 minutes.
  5. Mix in the Kashmiri red chili powder, turmeric powder, and coriander powder, cooking for 1-2 minutes until the spices release their aroma.
  6. Pour in the coconut milk and tamarind paste, stirring well to combine. Bring to a gentle simmer.
  7. Add the fish pieces to the pan, ensuring they are submerged in the curry. Cook for about 10-12 minutes, or until the fish is cooked through.
  8. Season with salt to taste and add the curry leaves, cooking for an additional 2 minutes.
  9. Garnish with fresh coriander leaves before serving.
