- Ginger (grated) - 1 tablespoon

- Tomato (chopped) - 1 medium
- Kashmiri red chili powder - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 tablespoon
- Coconut milk - 200 ml
- Tamarind paste - 1 tablespoon
- Salt - to taste
- Curry leaves - a handful
- Fresh coriander leaves (for garnish) - a handful
Steps
- Heat coconut oil in a pan over medium heat.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the grated ginger and minced garlic, and sauté for another minute until fragrant.
- Add the chopped tomatoes and cook until they soften, about 3-4 minutes.
- Mix in the Kashmiri red chili powder, turmeric powder, and coriander powder, cooking for 1-2 minutes until the spices release their aroma.
- Pour in the coconut milk and tamarind paste, stirring well to combine. Bring to a gentle simmer.
- Add the fish pieces to the pan, ensuring they are submerged in the curry. Cook for about 10-12 minutes, or until the fish is cooked through.
- Season with salt to taste and add the curry leaves, cooking for an additional 2 minutes.
- Garnish with fresh coriander leaves before serving.
