- Cooked chicken breast, shredded - 150 grams
- Eggs - 2

- Green chilies, slit - 2
- Ginger-garlic paste - 1 tablespoon
- Curry leaves - 8-10 leaves
- Turmeric powder - 1/2 teaspoon
- Chili powder - 1 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Coriander leaves, chopped - for garnish
Steps
- Heat oil in a large skillet or wok over medium heat.
- Add the chopped onions and sauté until they turn golden brown.
- Stir in the ginger-garlic paste and green chilies, cooking for an additional minute until fragrant.
- Add the chopped tomato, capsicum, and grated carrot; cook until the vegetables soften.
- Sprinkle in the turmeric powder, chili powder, garam masala, and salt; mix well and cook for 2-3 minutes.
- Add the shredded chicken and mix until well combined with the vegetables.
- Push the mixture to one side of the pan, crack the eggs into the empty space, and scramble them until cooked through.
- Once the eggs are cooked, mix them with the chicken and vegetable mixture.
- Tear the parottas into small pieces and add them to the skillet, stirring thoroughly to combine all ingredients.
- Add curry leaves and cook for another 2-3 minutes, ensuring everything is well mixed and heated through.
- Garnish with chopped coriander leaves before serving.
