Ingredients

  • Roti or Paratha - 2 large
  • Mixed vegetables (carrot, bell pepper, peas) - 1 cup (150g)
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Garlic - 1 teaspoon, minced
  • Curry leaves - 10 leaves
  • Turmeric powder - 1/4 teaspoon
  • Chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Vegetable oil - 2 tablespoons
  • Coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion, green chili, ginger, and garlic to the skillet. Sauté until the onions are translucent.
  3. Add the mixed vegetables and curry leaves to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
  4. Stir in the turmeric powder, chili powder, garam masala, and salt. Mix well and cook for an additional 2 minutes.
  5. While the vegetables are cooking, heat a separate skillet and lightly toast the roti or paratha until golden on both sides. Remove and chop into small pieces.
  6. Add the chopped roti or paratha to the vegetable mixture in the skillet. Mix everything together thoroughly, ensuring the bread is well coated with spices.
  7. Drizzle the remaining vegetable oil over the mixture and stir-fry for another 5 minutes.
  8. Remove from heat and garnish with chopped coriander leaves and a squeeze of lemon juice before serving.
