- Roti or Paratha - 2 large
- Mixed vegetables (carrot, bell pepper, peas) - 1 cup (150g)
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Garlic - 1 teaspoon, minced
- Curry leaves - 10 leaves
- Turmeric powder - 1/4 teaspoon
- Chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Vegetable oil - 2 tablespoons
- Coriander leaves - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Add the chopped onion, green chili, ginger, and garlic to the skillet. Sauté until the onions are translucent.
- Add the mixed vegetables and curry leaves to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the turmeric powder, chili powder, garam masala, and salt. Mix well and cook for an additional 2 minutes.
- While the vegetables are cooking, heat a separate skillet and lightly toast the roti or paratha until golden on both sides. Remove and chop into small pieces.
- Add the chopped roti or paratha to the vegetable mixture in the skillet. Mix everything together thoroughly, ensuring the bread is well coated with spices.
- Drizzle the remaining vegetable oil over the mixture and stir-fry for another 5 minutes.
- Remove from heat and garnish with chopped coriander leaves and a squeeze of lemon juice before serving.
