- Fresh coriander leaves - 200 grams
- Chickpea flour (besan) - 100 grams
- Rice flour - 2 tablespoons
- Green chilies, finely chopped - 2
- Ginger, grated - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Salt - 1 teaspoon
- Water - 100 ml
- Oil - for frying
Steps
- Wash and finely chop the fresh coriander leaves, and set aside.
- In a mixing bowl, combine chickpea flour, rice flour, green chilies, grated ginger, turmeric powder, cumin powder, and salt.
- Gradually add water to the mixture and stir until you achieve a smooth batter.
- Fold in the chopped coriander leaves until well incorporated.
- Grease a steaming tray or a heatproof dish and pour the coriander batter into it, spreading it evenly.
- Steam the mixture for about 20-25 minutes until it's firm and cooked through.
- Once done, remove from the steamer and let it cool for a few minutes before cutting it into squares or rectangles.
- Heat oil in a frying pan over medium heat, and shallow fry the steamed pieces until they are golden brown and crispy on all sides.
- Drain on paper towels and serve hot with green chutney or tamarind sauce.
