Ingredients

  • Fresh coriander leaves - 200 grams
  • Chickpea flour (besan) - 100 grams
  • Rice flour - 2 tablespoons
  • Green chilies, finely chopped - 2
  • Ginger, grated - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - 100 ml
  • Oil - for frying

Steps

  1. Wash and finely chop the fresh coriander leaves, and set aside.
  2. In a mixing bowl, combine chickpea flour, rice flour, green chilies, grated ginger, turmeric powder, cumin powder, and salt.
  3. Gradually add water to the mixture and stir until you achieve a smooth batter.
  4. Fold in the chopped coriander leaves until well incorporated.
  5. Grease a steaming tray or a heatproof dish and pour the coriander batter into it, spreading it evenly.
  6. Steam the mixture for about 20-25 minutes until it's firm and cooked through.
  7. Once done, remove from the steamer and let it cool for a few minutes before cutting it into squares or rectangles.
  8. Heat oil in a frying pan over medium heat, and shallow fry the steamed pieces until they are golden brown and crispy on all sides.
  9. Drain on paper towels and serve hot with green chutney or tamarind sauce.
