Ingredients
- Basmati rice - 1 cup
- Water - 2 cups
- Kothimbir Vadi (coriander fritters) - 200 grams
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 tsp, grated
- Cumin seeds - 1 tsp
- Turmeric powder - 1/2 tsp
- Salt - to taste
- Fresh coriander leaves - 2 tbsp, chopped
- Oil - 2 tbsp
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
- In a pot, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onions and sauté until they are translucent.
- Stir in the grated ginger and chopped green chili, cooking for another minute until fragrant.
- Add turmeric powder and salt, mixing well.
- Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spices.
- Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice cooks, cut the kothimbir vadi into small pieces.
- Once the rice is cooked, gently fluff it with a fork and fold in the chopped kothimbir vadi and fresh coriander leaves.
- Serve hot, garnished with extra coriander if desired.
