Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Kothimbir Vadi (coriander fritters) - 200 grams
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 tsp, grated
  • Cumin seeds - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Salt - to taste
  • Fresh coriander leaves - 2 tbsp, chopped
  • Oil - 2 tbsp

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 15 minutes.
  2. In a pot, heat 2 tablespoons of oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the finely chopped onions and sauté until they are translucent.
  4. Stir in the grated ginger and chopped green chili, cooking for another minute until fragrant.
  5. Add turmeric powder and salt, mixing well.
  6. Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the spices.
  7. Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and water is absorbed.
  8. While the rice cooks, cut the kothimbir vadi into small pieces.
  9. Once the rice is cooked, gently fluff it with a fork and fold in the chopped kothimbir vadi and fresh coriander leaves.
  10. Serve hot, garnished with extra coriander if desired.
