Ingredients

  • Kothimbir Vadi - 200 grams
  • Pizza base (store-bought or homemade) - 2 units
  • Vegan cheese (shredded) - 100 grams
  • Tomato sauce - 100 ml
  • Onion (sliced) - 1 medium
  • Bell pepper (sliced) - 1 medium
  • Tomato (sliced) - 1 medium
  • Coriander leaves (chopped) - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Black pepper (ground) - 1/2 teaspoon
  • Salt - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a skillet, heat olive oil over medium heat and sauté the sliced onion and bell pepper until they are soft, about 5 minutes.
  3. Spread the tomato sauce evenly on each pizza base.
  4. Place the sautéed vegetables on top of the sauce, followed by slices of tomato.
  5. Cut the Kothimbir Vadi into small cubes and distribute them evenly over the pizzas.
  6. Sprinkle shredded vegan cheese over the entire surface of the pizzas.
  7. Season with ground black pepper and salt to taste.
  8. Bake the pizzas in the preheated oven for 10-12 minutes or until the cheese is melted and the edges are golden.
  9. Remove from the oven and garnish with chopped coriander leaves before slicing and serving.
