Ingredients

  • Cilantro leaves - 100 grams
  • Gram flour (besan) - 150 grams
  • Rice flour - 2 tablespoons
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Water - 200 ml (as needed)
  • Oil - for frying
  • Tamarind chutney - 4 tablespoons
  • Green chutney - 4 tablespoons
  • Chaat masala - 1 teaspoon
  • Sev (crispy chickpea noodles) - 50 grams
  • Pomegranate seeds - 2 tablespoons
  • Chopped onion - 2 tablespoons
  • Chopped tomato - 2 tablespoons

Steps

  1. Wash and finely chop the cilantro leaves, and place them in a mixing bowl.
  2. Add gram flour, rice flour, green chili, ginger, turmeric powder, cumin seeds, and salt to the bowl.
  3. Gradually add water while mixing until a thick batter forms.
  4. Grease a steaming tray or a flat dish, pour the batter into it, and spread evenly.
  5. Steam the batter for about 20 minutes or until a toothpick comes out clean.
  6. Once steamed, let it cool for a few minutes before cutting it into small cubes.
  7. In a pan, heat oil over medium heat and fry the cubes until golden brown and crispy on all sides. This should take about 5-7 minutes.
  8. Remove the fried cubes and place them on paper towels to absorb excess oil.
  9. To assemble the chaat, place a few fried cubes on a plate, drizzle tamarind and green chutneys over them.
  10. Sprinkle chaat masala, sev, pomegranate seeds, chopped onion, and chopped tomato on top.
  11. Serve immediately and enjoy your Kothimbir Vadi Chaat!
