Ingredients

  • Chicken thighs, boneless - 300 grams
  • Yogurt - 150 grams
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic cloves, minced - 3
  • Ginger, grated - 1 tablespoon
  • Tomato puree - 2 tablespoons
  • Coconut milk - 100 ml
  • Ghee or vegetable oil - 2 tablespoons
  • Korma spice mix - 2 tablespoons
  • Salt - 1 teaspoon
  • Fresh coriander, chopped - for garnish
  • Cashew nuts, ground - 2 tablespoons
  • Green chili, slit - 1 (optional)

Steps

  1. In a bowl, combine the yogurt, garlic, ginger, and korma spice mix. Add the chicken thighs and marinate for at least 30 minutes.
  2. In a large pan, heat the ghee or oil over medium heat. Add the chopped onion and sauté until golden brown.
  3. Stir in the marinated chicken (reserve the marinade) and cook until the chicken is browned on all sides.
  4. Add the tomato puree and cook for 2-3 minutes, stirring well.
  5. Pour in the reserved marinade and coconut milk. Stir to combine, and season with salt.
  6. Bring the mixture to a gentle simmer, cover, and cook for 20 minutes, or until the chicken is cooked through and tender.
  7. If desired, add the ground cashew nuts to thicken the sauce. Stir well and cook for an additional 5 minutes.
  8. Garnish with fresh coriander and serve hot with rice or naan.
