- Chicken thighs, boneless - 300 grams
- Yogurt - 150 grams
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic cloves, minced - 3
- Ginger, grated - 1 tablespoon
- Tomato puree - 2 tablespoons
- Coconut milk - 100 ml
- Ghee or vegetable oil - 2 tablespoons
- Korma spice mix - 2 tablespoons
- Salt - 1 teaspoon
- Fresh coriander, chopped - for garnish
- Cashew nuts, ground - 2 tablespoons
- Green chili, slit - 1 (optional)
Steps
- In a bowl, combine the yogurt, garlic, ginger, and korma spice mix. Add the chicken thighs and marinate for at least 30 minutes.
- In a large pan, heat the ghee or oil over medium heat. Add the chopped onion and sauté until golden brown.
- Stir in the marinated chicken (reserve the marinade) and cook until the chicken is browned on all sides.
- Add the tomato puree and cook for 2-3 minutes, stirring well.
- Pour in the reserved marinade and coconut milk. Stir to combine, and season with salt.
- Bring the mixture to a gentle simmer, cover, and cook for 20 minutes, or until the chicken is cooked through and tender.
- If desired, add the ground cashew nuts to thicken the sauce. Stir well and cook for an additional 5 minutes.
- Garnish with fresh coriander and serve hot with rice or naan.
