- Bottle gourd - 200 grams, grated
- Carrot - 100 grams, grated
- Split yellow moong dal - 50 grams
- Coconut - 30 grams, grated
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Green chilies - 2, finely chopped
- Ginger - 1 teaspoon, grated
- Curry leaves - 8-10 leaves
- Salt - to taste
- Oil - 1 tablespoon
Steps
- Rinse the split yellow moong dal thoroughly and soak it in water for about 15 minutes.
- In a pot, bring water to a boil and add the soaked moong dal. Cook for 8-10 minutes until soft but not mushy. Drain and set aside.
- In the same pot, add the grated bottle gourd and carrot. Add turmeric powder and salt, and cook until the vegetables are tender, about 5-7 minutes.
- In a separate pan, heat oil over medium heat. Add mustard seeds and let them crackle, then add cumin seeds, chopped green chilies, grated ginger, and curry leaves. Sauté for a minute until fragrant.
- Combine the cooked dal and the sautéed spice mixture with the cooked vegetables. Mix in the grated coconut and adjust salt to taste.
- Cook everything together for another 2-3 minutes, allowing the flavors to meld, then remove from heat.
