Ingredients

  • Bottle gourd - 200 grams, grated
  • Carrot - 100 grams, grated
  • Split yellow moong dal - 50 grams
  • Coconut - 30 grams, grated
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Green chilies - 2, finely chopped
  • Ginger - 1 teaspoon, grated
  • Curry leaves - 8-10 leaves
  • Salt - to taste
  • Oil - 1 tablespoon

Steps

  1. Rinse the split yellow moong dal thoroughly and soak it in water for about 15 minutes.
  2. In a pot, bring water to a boil and add the soaked moong dal. Cook for 8-10 minutes until soft but not mushy. Drain and set aside.
  3. In the same pot, add the grated bottle gourd and carrot. Add turmeric powder and salt, and cook until the vegetables are tender, about 5-7 minutes.
  4. In a separate pan, heat oil over medium heat. Add mustard seeds and let them crackle, then add cumin seeds, chopped green chilies, grated ginger, and curry leaves. Sauté for a minute until fragrant.
  5. Combine the cooked dal and the sautéed spice mixture with the cooked vegetables. Mix in the grated coconut and adjust salt to taste.
  6. Cook everything together for another 2-3 minutes, allowing the flavors to meld, then remove from heat.
