- Moong dal - 50 grams
- Chana dal - 50 grams
- Black pepper - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coconut (grated) - 2 tablespoons
- Salt - to taste
- Mixed vegetables (carrots, beans, and pumpkin) - 200 grams
- Oil - 1 tablespoon
- Mustard seeds - 1/2 teaspoon
- Curry leaves - a few
Steps
- Rinse the moong dal and chana dal in water and soak them for 15 minutes.
- In a pot, add the soaked lentils, mixed vegetables, turmeric powder, and enough water to cover the ingredients. Cook until the lentils and vegetables are tender, about 15 minutes.
- In a small pan, dry roast the black pepper and cumin seeds until fragrant, then grind them into a fine powder.
- Once the lentils and vegetables are cooked, add the ground spice mix, grated coconut, and salt to the pot, stirring well to combine. Cook for an additional 5 minutes.
- In a separate small pan, heat oil over medium heat. Add mustard seeds and let them splutter, then add curry leaves and sauté for a minute.
- Pour the tempering over the kootu curry and mix well. Serve hot with rice or roti.
