Ingredients

  • Moong dal - 50 grams
  • Chana dal - 50 grams
  • Black pepper - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coconut (grated) - 2 tablespoons
  • Salt - to taste
  • Mixed vegetables (carrots, beans, and pumpkin) - 200 grams
  • Oil - 1 tablespoon
  • Mustard seeds - 1/2 teaspoon
  • Curry leaves - a few

Steps

  1. Rinse the moong dal and chana dal in water and soak them for 15 minutes.
  2. In a pot, add the soaked lentils, mixed vegetables, turmeric powder, and enough water to cover the ingredients. Cook until the lentils and vegetables are tender, about 15 minutes.
  3. In a small pan, dry roast the black pepper and cumin seeds until fragrant, then grind them into a fine powder.
  4. Once the lentils and vegetables are cooked, add the ground spice mix, grated coconut, and salt to the pot, stirring well to combine. Cook for an additional 5 minutes.
  5. In a separate small pan, heat oil over medium heat. Add mustard seeds and let them splutter, then add curry leaves and sauté for a minute.
  6. Pour the tempering over the kootu curry and mix well. Serve hot with rice or roti.
