- Chicken breast - 300 grams
- Basmati rice - 50 grams
- Yogurt - 50 grams
- Onion - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Garam masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Mint leaves - 1/4 cup, chopped
- Cilantro - 1/4 cup, chopped
- Lemon juice - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Skewers - 4 (if using wooden, soak in water for 30 minutes)
Steps
- Start by marinating the chicken: In a bowl, combine yogurt, ginger-garlic paste, garam masala, turmeric powder, red chili powder, coriander powder, lemon juice, and salt. Add the chicken pieces and coat them well. Cover and let it marinate for at least 30 minutes.
- While the chicken is marinating, cook the basmati rice: Rinse the rice under cold water until the water runs clear, then soak in water for 20 minutes. Drain and cook in boiling salted water for about 10-12 minutes until al dente. Drain and set aside.
- Preheat your grill or BBQ. Thread the marinated chicken pieces onto the skewers, alternating with pieces of onion if desired.
- Brush the grill with olive oil and place the kebabs on it. Grill for about 15-20 minutes, turning occasionally until fully cooked and slightly charred.
- Once the kebabs are done, remove them from the grill and let them rest for a few minutes. Serve the kebabs on a bed of basmati rice, garnished with mint and cilantro.
