Ingredients

  • Basmati rice - 1 cup
  • Ground lamb or beef - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, finely chopped
  • Cilantro (coriander leaves) - 2 tablespoons, chopped
  • Mint leaves - 1 tablespoon, chopped
  • Garam masala - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - 1/4 teaspoon
  • Cooking oil - 2 tablespoons
  • Water - 2 cups
  • Whole spices (bay leaf, cloves, cardamom, cinnamon) - 1 each

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a mixing bowl, combine ground meat, half of the chopped onion, garlic, ginger, green chili, cilantro, mint, garam masala, cumin powder, red chili powder, salt, and black pepper. Mix well and form into small balls (koftas).
  3. Heat oil in a deep pan over medium heat. Fry the koftas until browned on all sides, then remove and set aside.
  4. In the same pan, add the remaining chopped onion and sauté until golden brown. Add the whole spices and sauté for another minute until fragrant.
  5. Drain the soaked rice and add it to the pan, stirring gently to coat the rice in the oil and spices for about 2 minutes.
  6. Add 2 cups of water and salt to taste. Bring it to a boil, then reduce the heat to low and add the fried koftas on top.
  7. Cover the pan tightly and cook on low heat for 15-20 minutes, or until the rice is fully cooked and has absorbed all the water.
  8. Remove from heat and let it sit, covered, for another 5 minutes. Fluff the rice gently with a fork before serving.
